Wild rabbit meat, which is leaner and tastier than the farmed variety, has a fabulous subtle, gamey flavour which is very different from richly flavoured hare.
Tasty wild rabbit can be used as an alternative to chicken for a wholesome meal in the autumn or winter.
Allow 1/2 lb or 225g per person.
Approximately one rabbit will serve 4 if used in a casserole.
