Classic slow cooking meat when combined with its ideal partner, cow heel, it will certainly stick to your ribs in the cold weather.  The shin breaks down to provide tasty meat and a thick gravy, beautifully tender.

8oz or roughly 225g per person.

Basic Cooking Guide

Casserole at Gas Mark 3/170ºC/325ºF or stew low and slow for 2 hours+. Suggested minimum cooking time 2 hours.
