We carve the tender fillet from the chicken breast, so it is boneless and requires minimum cooking.
Fillets are useful for grilling or frying whole, or cutting up for stir-fry, casseroles or curries.

Casserole approx cooking time 2 hours + on a low heat, or cover & roast on a high heat for 30 minutes turning down for a further ten minutes uncovered.
